Ricotta Lemon Pancakes/Творожники с Лимоном

Fluffy, light with pleasant lemon taste. Made with whole wheat flour. Perfect breakfast for kids, as it can be difficult sometimes to feed them some healthy proteins:)




230g firm ricotta or cottage cheese
1 cup (250ml) WW flour
5g baking powder
pinch of salt
2tb.s. sugar
zest of 0,5 lemon
1t.s. lemon juice
vanilla
1 egg
2 heaping table spoons Greek yogurt

Combine cheese, yogurt and egg, add sugar, salt, baking powder, zest and flour.
Lightly grease frying pan, scoop with a table spoon some dough and flatten it a little. Fry for about 2 minutes on each side. Makes 8-10 pancakes.
